What I love most about this simple popsicle recipe is that it’s fast and easy to do. The kids are going to be amazed that a treat as fun-looking and as delicious as this can be made right in your very own kitchen in minutes. Perfect for the summer heat or just a great way to have a day dedicated to all things rainbow.
I use two ingredients in this recipe – yogurt and food coloring – but if your child has an allergy to food coloring or you prefer to not prepare foods with it in general, you can always use my popsicle layering hack with natural fruit-based coloring instead!

Tips for Making These Rainbow Popsicles
Food Coloring Choice. While my family does not have allergic reactions to food coloring, we are comfortable with adding it to food occasionally. But when possible, I make sure to choose a food coloring brand that uses natural fruits, vegetables, and roots instead of artificial coloring.
If you prefer to not use coloring at all, you can integrate natural foods and vegetables yourself to make colorful popsicles. For example, blueberry puree added to yogurt will make a purple color, strawberry puree added to yogurt will make a pink color, and turmeric added to yogurt will make a yellow color.
Yogurt Choice. Make sure the texture of the yogurt is not too thin and not too thick! It is important that the layers can easily be sucked up into the medicine dropper, but also sturdy enough that they stay as separate layers once dispensed into the popsicle mold!
